Braw Tea Hospitality Course – Application Deadline 28 Jan

I wanted to share details of an upcoming hospitality and café-based training opportunity delivered in partnership with Braw Tea located at Castle Green in Broughty Ferry which we are now looking to generate interest in across the Discover Work partnership.

Programme Overview

This is a 6-week training programme, followed by a further 2 weeks of volunteering, staggered across a rota to allow participants to properly embed their skills in a real café environment.

Weekly structure (10am–1pm):

  • Monday – Kitchen Skills
  • Tuesday – Barista Skills (with Iona)
    Introduction to coffee and coffee science, espresso, steaming milk, latte art, working at speed, clean working practices, and opening/closing a coffee station. Includes hands-on customer service using the coffee cart.
  • Wednesday – Mental Wellbeing & Resilience (with Veronica)
    Focused on mindset, confidence, and resilience for work. Participants will complete exercises on their mobile phones and receive supportive input aimed at building confidence and work readiness.
  • Thursday – Practical Kitchen Application
    Led by four kitchen leads – task allocation, mucking in, baking, soups, and applying kitchen skills in a busy, supportive environment.

Towards the end of the programme, participants will complete 2 weeks of café volunteering (2 x 4-hour sessions, with some flexibility).

Additional Support Included

  • Industry-specific CV writing and interview preparation
  • Front-of-house and customer service skills (confidence, eye contact, public interaction – reframing “being shy” as something that can be developed)
  • Till work and FOH exposure

Dress Code (for practical sessions)

  • Jeans or leggings
  • Covered shoes
  • Black top (t-shirt or long sleeve)
  • Hair tied up for cookery
    (Participants will be provided with a blue apron and red bandana. Spare tops are available on site if needed.)

  • Thursday 29th, 2–3pm @ Braw Tea
  • Deadline for applicants for info day – 12 noon – Wednesday 28th – Please email james.lees@enable.org.uk if you are interested
  • Capacity for up to 10 attendees at the information session
  • Only 6 places available on the programme for this intake
